Beat a beet cake!!

images (6)We should end the beet series on a sweet note. There are quite a few desserts that are possible to be put together using beetroot. Kheer or payasam, halwa, barfi, beetroot laddu, brownies and even cakes can be put together. All these dishes are tasty and nutritious. Since we are doing this series especially for cancer patients, we have to make sure that the recipe that we choose is not only tasty and nutritious but also easy to digest.

I have no idea how the idea of cooking a dessert with beets came to me. I googled and lo I realize that there are many dessert recipes in which beet can be incorporated quite effortlessly. I have decided to share the recipe of a beet cake made using whole wheat flour instead of refined flour. I do not remember the exact site from which I took the recipe but I have it roughly noted down in one of diaries. I am sure it is available on a number of sites. When I was requested to put together a few recipes using beet, I knew I would end the series with this specific sweet recipe. Thanks to the unknown person who put it on the net.

  • Whole wheat flour: 2 cups
  • Beetroot: 250 gms
  • Sugar: 1 ½ cup
  • Baking Powder: 2 tbs.
  • Baking Soda: 1 tbs.
  • Butter: 150 gms.
  • Milk: 1 cup

The Procedure:

  1. Once you have all the ingredients ready it is time to start work.
  2. For the first step, we need to get ready beet puree. The process is simple, peel the beet, cut it into pieces; boil and using a blender grind it to a fine paste. Do not throw away the water in which beet was boiled. It can be used for grinding or can simply be cooled and enjoyed as such.
  3. Preheat the oven at 1800C and grease the baking tray with butter. Dust it with some flour and keep aside.
  4. Sift the flour add baking powder and baking soda to it. Mix thoroughly. It is best to sift the flour two to three times as it helps make the cake fluffier.
  5. Beat the butter and sugar till it becomes fluffy.
  6. Add the beetroot puree to this and once again mix well.
  7. Add the flour in small quantities while gently folding in the barter.
  8. Shift the barter to the greased baking tray and bake for 35-40 minutes or till it is done.

In case there are children in the house, ask them to help you with baking the cake. The pleasure on their face will not only brighten the cake but the overall environment in the house. They will make sure that the person for whom the cake has been baked does justice to it.
